A success...

If you like something quick and easy try this recipe. Mark loved it! He always has given me his approval and thoughts regardless if I want to hear it or not. He loved this one!YUMMY!
I got it out of my newest edition of the Rachael Ray mag. This is still out in stores if you want to purchase it. It has a few noteworthy recipes inside.

Here is the recipe...

Turkey-Tortilla Casserole( I used chicken)
Serves 6/ Prep 20min/ Bake 40 min/
2 limes cut in fours
1 pound of Turkey breast or chicken
salt
1 large onion, finely chopped
One 4-ounce can diced jalapeno chilies, liquid reserved
Two 14.5-ounce cans fire-roasted diced tomatoes
One 1-pound bag tortilla chips, lightly crushed
One 14.5-ounce can chicken broth
1 pound Mexican shredded cheese blend (about 4 cups) *** I used 2 cups
1 cup sour cream

Directions

1. Preheat a grill pan to medium-high ( I used a regular fry pan). Squeeze the limes over the turkey or chicken; season with salt. Grill or cook the turkey or chicken until just cooked through, 3 to 4 minutes per side (chicken will take longer). Let cool, then slice into 2-inch-long strips. (I cut mine into strips ahead of time)

2. Preheat oven to 375 degrees. Then in a large bowl, combine onion, jalapenos with their liquid and tomatoes. Add the tortilla chips and turkey(in my case chicken) and toss well. Transfer the mixture to a greased 9-by-12-inch baking dish. Drizzle with the chicken broth and top with cheese. Bake uncovered until cheese is golden around edges, about 40 minutes(in my case it was 27 minutes) Watch it though! Serve with the sour cream. I put chives as well! It was really good. A must try! Have fun!

Quick and easy...

that is what this meal is. My friend Mariah Williams wanted a meal you can freeze. Well here you go! The only thing is you can't freeze the rice. You can always just make the easy 5 minute rice. This meal is so easy to make but oh so good!
Start with cream of mushroom soup two cans!

Then three heaping tablespoons of cream cheese.

A pinch of salt and pepper!

Three chicken breasts and place in crock pot.

Place it all together and put it on low. Six hours later and it is done. The chicken will be flaky and falling apart. Sample some of it, it is so good!

15 minutes before the chicken is done, make rice as directed on package.

This is the finished product! You can not mess up on this recipe.

Mexican anyone?...

My sister will be happy I posted this recipe. This is one of her favorites. No matter how many times I teach her in person, she can not get it right. She makes this awesome Spanish rice that I can not learn. Anyways this is for you Martha and Mark (because he wanted it for dinner.)

* 3 chicken breast (makes for a family of four)Add more for bigger family's and it should be fine with all the same amounts.
* 2 table spoons of Chili powder
* 1 table spoon of chicken flavor bouillon
* 1/2 teaspoon of garlic salt
* 1 teaspoon of crushed garlic
* 3 table spoons of lemon juice
* 1 half of an onion (chopped thick)
* 1 whole bell green pepper (chopped thick)
* 2/3 cup of peeled tomatoes from a can.

Put everything into a skillet on medium.Let it cook on medium and boil with all the juices. There will be alot of juice. Let the onions and bell pepper get nice and soft and turn up the heat to high. Let it continue to boil until the moisture is all gone and the chicken is done and the onion and bell pepper are completely soft.
Meanwhile toast your tortilla in a non stick skillet.
Chicken should be done and now it is time to put the cheese and sour cream along with the chicken into the tortilla. I normally have avocado, but did not have any on hand. Avocado is good in it as well.
Now it is time to eat it!

Yummy! If you have any questions just ask. I always make this through memory and I used measuring amounts this time to post this for my sister. Now it is time for the siesta.

Gentlemen start your engines...

Mark and I had the pleasure of going to the races yesterday! This is Marks favorite sport. He also loves baseball (Go Diamond Backs) and Basketball. We had loads of fun. This was our fourth time going and this was the best time. Normally I get stuck sitting next to some smelly person who either 1. drinks or 2. smokes or 3. seems to want to talk to me throughout the race (which I don't mind the 3 one as much but not at a race. It is way to loud!) This year it was great! The only thing I disliked was the little kid sitting behind me. He was hitting my bum with his shoe. Which was annoying but I would rather deal with that then number 1 or 2. Marks driver Won. Which made it magical for him, he was so excited.

* This is the gear you must wear at a Nascar race. We are cute!

* This is our silly side! HA!

* This is the monitor we rented so we could see better.
* This is the crowd.
* This is the race track with the side view of Jack my father in law.
* These people are my in laws (what a cute couple)!
* And this is the winner Jimmie Johnson GOOD JOB!!!

Does your dog wear a diaper?...

My dog does! For the past couple of WEEKS, more like two weeks my dog has been in heat. Yuck!! Mark and I have decided to get her fixed. A.S.A.P It is ohhhhh so joyous to take off and on her diaper. As Bob Parker has always said "Have your pets spade or neutered". That is good advice! She is such a good dog though. We love her! Tomorrow we are going to Prescott to get Mark's teeth cleaned. Dr. Dalton is such a good Dentist. The best part is the price. With Mark's sister working there (with her discount) and using our insurance, we always come out of the dentist smiling.
Tomorrow will also be a great day cuz... The Office will have a new episode. Mark and I's weakness. We do love that show!
