Am I getting old or what?

Working for the summer program, I am faced with all types of children. Some come from good families and some are less fortunate. Working with 115 kids and getting to know each personality, I have come to realize how different it is to be a kid at this time in age. We live in a time where instant self gratification is a must. It is a "I want it now generation"! It is a exciting time to be a kid but also not as simple as it once was. It is a generation full of electronics that consumes ones attention. I remember when I was a child, I was outside from morning till the sun was going down. The outside world was my playground and I could imagine my days away. Don't get me wrong, I loved playing a occasional game of ATARI with the neighborhood boys! Ms. PAC-man was the best! My best memories where selling flowers or my painted rocks to the neighborhood to find myself at the candy store down the street, buying my nickel Tootsie rolls. "Call Me Old Fashion" but I really miss those care free days!

Coconut-Pineapple loaf cake...

I was really excited to make my Sundays dessert! It was yummy! I got it from the Everyday Food mag, June issue again! I love the June issue! I found some really yummy recipes! Anyways if you feel like some really good loaf cake, try this out! Side note-my loaf took longer to bake then the directions. Try like 20 more minutes longer. It was OK though, my house smells so good from the coconut!

The curse of my Great Grandma's earlobes!

It is a sad story but true! I have really big dumbo earlobes. They are a downfall for me. I got them from my great grandmother on my Dad's side. I am the only one who got them. The way I think about it is,I got the left overs, since I am the youngest of six. HA! Anyways I found some really cute earrings on sale and thought I could pull them off! HA! Not a chance! They make my earlobes sag! I get so envies of the women who can wear the stylish dangle earrings and the cute hoop ones as well! Oh well my great grandmother was a sweet lady and I am glad I have her earlobes!
If anyone wants these let me know! They will just collect dust in my jewelry box.

Nicki

Today after work, Mark called to tell me that his parents dog was being put to sleep. I instantly called his parents and had heard the sad news! Cute little Snicker doddle (Nicki) had some heart problems and was in bad pain. He was having a hard time eating and being a normal little dog. After 13 years of owning him the little guy was put to sleep today. He was such a sweet dog and was Jacks (father in law) bud, they went everywhere together. Mark and I got a dachshund because of sweet little Nicki. We will miss him and always remember the fun memories we had with him!

Quick Green Sauce Chicken Enchiladas

I don't know anyone who does not like a yummy enchilada! So I came up with my own fast version of it, through the inspiration of Everyday Food magazine, June issue! Mark loved it and therefore I had to post it!

What you will need

1 pound of chicken, cut length wise chicken/chunks
1 teaspoon of cumin
1 teaspoon of salt
1 teaspoon of pepper
2 teaspoons of garlic salt
2 tablespoons of olive oil
1 large onion, chopped
1 tablespoon of garlic cloves, minced
2 28oz cans of tomatillos
9 corn tortillas
2 cups of white cheddar cheese

In a large non-stick fry pan place olive oil along with chicken, onion, minced garlic and cumin together. Cook on medium heat until chicken is cooked thoroughly and onions are soft. When done set aside. Meanwhile put the tomatillos in a food processor and blend until smooth. When done place in a medium sauce pan and mix in salt, pepper and garlic salt. Stir and cook on low and let it simmer. Then place tortillas in damp paper towels and microwave on high for 1 minute. Working with one tortilla at a time, dip in sauce, place on a work surface, and fill with a small amount of chicken and 1 tablespoon of cheese. Roll up, and arrange, seam side down in your pan or glass dish. Top the remaining sauce and cheese, cover with aluminum and bake until sauce is bubbling, 15-20 minutes. Remove foil, and continue to bake until cheese is browned, about 15 minutes. Let enchiladas cool in dish for 10 minutes! Now go grab a fork and dive right in!

I also added sour cream on top! Mark loves sour cream with any Mexican dish! It was a yummy touch!

to tip his FORK (Noun), and to take my

FOOT (Part of the body) when crossing the street. He

should move CAREFULLY (Adverb),should have a/an

LUMPY (Adjective) voice, and should always dress

STUPIDLY (Adverb). I would also like him to be a/an

FUNNY (Adjective) dancer, and when we're alone, he should

whisper MESSY (Adjective) nothings in my

NOSE (Part of the body) and hold my

SILLY (Adjective) SOCK (Noun). I

know a/an CRAZY (Adjective) man like this is hard to find.

In fact, the only one I can think of is MARK (Person in

The task at hand...

So after work today, I had to go to a couple of places and get somethings done. Got my "do not forget list" ready this morning at 5:30 a.m. I really dislike shopping. As a teenager I loved it but as an adult, I dread it! Grocery shopping is the worse! I try to make it exciting by finding new recipes and making something new! I love to do that. Anywho got some yummy Indian India yumminess to try out. I have heard these pastes are good. I like to see if I can copy it and make them better.
Oh and sometimes I do like to stop and go places that were not on the list. It makes life more exciting. I cured my eye shadow fetish, with a bargain at Ulta! $3.98 total for all three. I had a coupon! Normally each eye shadow is $6.50. Plus I got free gifts again worth $25.00! I really like Ulta!

A cheap makeover...

So I have been wanting to get some highlights in my hair for awhile now and today was the day. I found a coupon and I was off to Target. Well I ended up sending only $4.99. Mark always wants me to go get it done at a salon. I never do, I can not part with $75.00 for just hair. I have been cutting and highlighting my hair since I was 12 years. I think it turned out good! Not bad for $4.99!
Ignore my fly aways, I have very fine hair!

Thanks Gameworks...

Yesterday for the summer program, we went to Gameworks! The kids have been looking forward to this for along time. I did take my camera (which seemed like a good idea) and did take some pictures.
HOWEVER... I had crying and very unhappy kids.

THE REASON... 20 minutes of game play.

YUP drove 45 minute to get there on a hot bus with 85 kids. Then waited 30 minutes for Gameworks to feed the kids (which Gameworks were suppose to have ready and waiting) and unlimited cards that did not work. So when the unlimited playing cards worked the kids only had 20 minutes to play games. I had one of my group of six kids tell me they did not even get to play one game. All of them were crying! The picture below was so sad. I had to cut it off. So if you ever are in the AZ Mills Mall. Don't support Gameworks! Very bad customer service!

FUN FACT--Did you know that a Cinnabon Classic Cinnamon Roll has 813 calories and 32 grams of fat. That is just one! This is one of Marks favorite things to eat!

My red days...

Can you tell what my favorite color was?
So I was going through our pictures on our hard drive and come up with these. Some dating pic's and some after marriage bliss. Good times! Thought I would share!Still love going to D-Backs games! My first Christmas present from Mark and I was ready to show it off! I was into the brand Roxy back in the day. My taste in clothing and such has matured since then! Thank goodness!

FUN FACT-- Would you believe Mr. Mark had long hair when I first met him? Yeah was not a fan about that!

A teddy bear-able cold!

Today I gave Courtney a new toy! She was thrilled to get it. Mark and I go every once and awhile to get her a couple of toys and then give them to her when she has killed her other ones. Today she looked like she needed a boast. So I went in our closet to give her a new teddy bear. She loves anything that squeaks and this bear does the trick. We have one happy dog!I love her!

*My nose has cleared some what for the day, which is nice to beable to taste and breathe and smell.*

Break out of your mold...

So normally when I am not sick, I have some kind of tasty desert brewing in my head for the glorious Sunday after meal. Well it is not happening today. I will do these this week when I have my energy and my health is back to normal. I got theses molds a year ago while shopping with a friend. They are fun to make. Bakerella made them and hers turned out cute. Here is the link if you would like to see them. It is at the bottom of her page.

The best sick day at home...

This drug is the miracle drug. I took some not to long ago and it is definitely drying me out. My nose and eyes are so raw. The kids were asking me if I had bloody burgers under my nostrils yesterday. They were just sores! HA! I don't know why I did not take this earlier! Hurray for medicine!I went grocery shopping with Mark this morning and found my absolute favorite topping for POP CORN. YUM! They have this topping at all Harkins locations and I crave it sometimes! Try it, it is so good! Since I am in no mood to go any where. We have a date at home watching a movie and playing some fun board games. Sometimes I like to have a sick day here or there.Happy sick day for me! HA!
